I had a go at making sunflower seed cream. I whizzed up some sunflower seeds and added vanilla and water until I got the right consistency. It didn’t taste so great on its own (slightly earthy) but with the strawberries 🍓 I though it was very nice and worth making.
I made a rhubarb compote with chia seeds and maple syrup. (Top tip from Jerry 👍) and put the strawberries on top and then poured over the cream. It really was nice.
The strawberries look lovely glistening in the sunshine.
I’m hoping the strawberries will get rid of a cold that I am fending off. So far I am winning thanks to olbus oil in copious amounts.

Hey this looks fantastic Ali and delicious with those strawberries and rhubarb... 🍓 so I'd say this sunflower cream is a great success.
I've been wondering about using sesame seeds as Tahini is great and when gf baking a combination of gf flours works best. So I wonder if a combination of seeds would work well for a plant based cream. And sweet tahini appeals to me...with your rhubarb compote...
Well I think it might work well. It’s certainly worth experimenting and if it doesn’t work out you can always use it for something else, so it wouldn’t be wasted.
