Itβs one punnet of frozen strawberries, the cream off a tin of coconut cream and a little of the water and a small drop of maple syrup. I like it to not be too hard and this was just right.
Itβs very nice and not too sweet. (Maybe not the best photo but Iβve packed my nice glasses ready to move house but you get the gist and it was a beautiful colour).π

I've just spotted your homemade Strawberry ice-cream, and it looks gorgeous. I wanted to ask whether adding the entire tin of coconut cream might be a good option too? Or is it purely the cream off the top - I was just thinking that if I opened an entire tin, I could mix it with the punnet of strawberries and it would make quite a good amount. But maybe it would be too thin? What do you think.
Hi, I made it twice. Thatβs what I was worried about. Once I just used the cream off the top and you are right it didnβt make much then I used 1 punnet of frozen strawberries and the cream off the top and added the coconut water from the tin a little at a time (as I wanted it creamy not icy) and I think I used half of the water. As the strawberries were frozen it was ready quite quickly and was creamy. What is now left in the freezer is frozen solid unfortunately so I will get it out a bit later and see what itβs like then and let you know if itβs still creamy. π π¦
