Here's a cottage pie I made for tea tonight, I cooked baby leeks, tender stem broccoli, baby carrots, onion and garlic which I gently cooked first, then I grated the potatoes on top, grated potatoes are great because the very top is crispy. I baked it for about 25mins.
Grating potatoes is a really quick way to cook them and you can make little individual patties like burgers and cook them in a few minutes and the outside is a crispy delight.
I gently fried diced onion with diced garlic in a little olive oil and then added chestnut mushrooms, baby leeks, tender stem broccoli, baby carrots, a little turmeric, cumin, coriander and ginger and left it on low. I put some plain gf flour in a pyrex jug and mixed with cold water to a paste, added more water with some gf tamari. Put that in a baking dish and grated the potatoes on top and baked at 170C for 25 mins until the top was crispy.
I tend to buy the veg that appeal to me when I'm shopping and I like seasonal veg like spring veggies and this is my favourite way of cooking them.
