Fermented food book recommendations?

hi you lovely lot,

Can you recommend a good book or website for home made fermented foods. I know I can Google but there is so much’noise’ out there I’m looking for a recommendation.

I have a gluten free Sourdough book I am not using if anyone wants it. Send me a message I’ll put it in the post.

Sorry I never invested in a book, just got recipes for things from websites or bought saurkraut. Do let us know what helps you and good luck.

These are pretty good instructions... our favourite is 1 x white cabbage, 1 red and some lemon zest.... typically could only get reds last week (new season greens just started) so that is what is bubbling and farting in the kitchen, every morning the whiff always makes me wonder what the dogs have been up to... until I remember the sauerkraut! 😅🤧

Yep been there! 😩 the red looks far more appealing, good crunch to and ticks the coloured food box 🌈

I've only ever bought sauerkraut but do really like it. Not ventured into making my own yet (being a little bit lazy about it)

But why does it cause such an increase in my wind output making it virtually impossible for me to eat it? Could this be because I consume too much in one go? Is this suggestive of another bowel issue? It causes me to bloat up with a noisy tum and rather excessive wind hence I only occasionally indulge in sauerkraut.

Certainly not lowering the tone around me 🤣 I’m a potty mouthed toilet humoured type in real life 🤭

What you say and the small dollop of saukraut I had at tea time totally explains my fermentation and bubbling wind over night 🙈I think mine is worse when I mix fermented foods with sugar (had a bit of Friday treat 90% chocolate after tea). I’m generally off the sugar.

I’m trying a new probiotic next that I heard about on a podcast yesterday… will see if eternal youth, playfulness, smooth gut motility and a glossy coat follow like in the rats they tested 🤣🤣 🌱

Ha ha that's ok then 😊 glad it's a known sauerkraut 'side effect' and not just me!

Maybe I need to think about taking a probiotic again? Hope you get good results from the new probiotic, less farting at the very least 🤸🏻‍♂️☺️

🤣 Me too, it must be all those good bugs have a party!

It is high in histamine which is an issue for me so little and often works better 🤗

Of course! I'd overlooked the high histamine in sauerkraut.

Next time I'll just have a small teaspoon and not consume half a jar full and see what effect that has on my 'output' 🤣

If you make your own then your kitchen will have a permanently farty smell which masks any personal trumpingtons! Win Win 😉

It's quite jolly having a farting jar going off regularly.... sort of anti air freshener 🤣

I recently bought River Cottage Fermentation by Rachel de Thample which I chose due to the reviews and because I already knew of her. It looks comprehensive and mainly easy, but I must admit I haven't used it yet.

The Look Inside facility doesn't let you see the index but the Chapters are: Fermentation Basics, Vegetables, Fruit, Drinks, Sourdough and Batters, Dairy and Dairy Alternatives, and Useful Things.
