Beetroot Risotto

This is a little off topic but I made my first Beetroot risotto! It was so delicious and full of B Vits, folate and lots more. Delicious 😋 (and halloumi too)

It’s under the halloumi and roasted beetroot. The rice is the same colour as the beetroot so it blends!

😂 I do usually do low carb and I really could eat beetroot and Halloumi by itself but not tonight! Why did I not know real beetroot was do delicious!

Do you normally eat synthetic beetroot, then?

The best way of eating beetroot is making into Borsch. I could kill for a bowl of Borsch!

Yes, pickled. Ok in small doses on a salad but I’ve never used it as a vegetable as such. So crunchy! So delicious! I’ve been so bored in lockdown and bored of meat 😩 I’m off to google Borsch! Never heard of it, sounds Baltic? Eastern European?

I watched a video and swapped ricotta for Halloumi.

Garlic an onion in butter and olive oil

Add arborio rice

Vermouth

Red wine

Chicken stock

Roast the beetroot

Purée half the beetroot and add to rice

Keep stirring all the time

Grill the Halloumi and tear into pieces

Hubby is a burger and chips man, it was funny in the beginning of our relationship as we’d eat together but two entirely different meals. Then kids cane along so he’d have to eat what we ate but he’s actually a wildly better cook than I. He’s just got a knack for flavours and doesn’t need recipes like me.

This meal was way out of his comfort zone but he ate all except the beetroot chunks. I’ve got left overs for work and I can’t wait to eat it!! 😋

I adore beetroot, in all its forms. Yottam Ottoleghi has some great recipes with it. I also make a juice with beetroot, carrot, apple and root ginger. I serve it in a wine glass and it looks and tastes divine.

Oh delicious! Thank you Staffsgirl! I’ll google Yottam Ottoleghi! The juice sounds good too. Do you use a juicer? I always feel bad for the pulp that’s left behind!! Lol

Meant Ottolenghi! I use a centrifugal juicer...know what you mean about pulp. I’ve been known to add it to a soup I’m making.

I'm partial to beetroot , my wife grows it on her allotment . A day after eating a goodly amount of it , I was convinced I had bladder cancer . Then I remembered the beetroot . Panic over .

Had a vegan chocolate cake once that had grated beetroot in it...... deliciously moist and tasty.

Don't have recipe unfortunately.

Can also really recommend sliced fried halloumi ...... it's as tasty as bacon, but 'vegetablists' are allowed to enjoy it too.

Ricotta? You don’t really need any cheese. It’s lovely just on its own.
