What aspect of diet? Diet for increased nutrients e.g. Iron, B12, calcium etc, diet for gluten free, autoimmune protocol diet, low carb for good blood glucose control, diet for weight reduction, diet for optimum thyroid function!????? Etc etc etc
Izabella Wentz, Hashimotos Protocol. It gives advice on supplements too.
I hear good things about her book "the root cause" but haven't read it myself
As you have PCOS and hemochromatosis your thyroid levels need carefully managing
Presumably you have had thyroid antibodies tested to confirm cause of hypothyroidism is due to autoimmune thyroid disease also called Hashimoto's

For full Thyroid evaluation you need TSH, FT4 and FT3 plus both TPO and TG thyroid antibodies tested. Also extremely important to test vitamin D, folate, ferritin and B12
Low vitamin levels are extremely common, especially if Thyroid antibodies are raised
Recommended on here that all thyroid blood tests should ideally be done as early as possible in morning and fasting. Last Levothyroxine dose should be 24 hours prior to test, (taking delayed dose immediately after blood draw). This gives highest TSH, lowest FT4 and most consistent results. (Patient to patient tip, best not mentioned to GP or phlebotomist)

Weightloss is virtually impossible if Thyroid is not correctly treated first. Once levels are correct, then weight should slowly drop
With Hashimoto's we frequently need to be strictly gluten free and/or dairy free
Ideally ask GP for coeliac blood test first or buy test online for under £20, just to rule it out first
Trying gluten free diet for 3-6 months. If no noticeable improvement then reintroduce gluten and see if symptoms get worse
