Drink coffee and green tea, They increase body's sensitivity to insulin...
Tackle water retention by having electrolyte mix in water. B6, Zinc and Magnesium could be the key ingredients, but go slow at first. Some electrolyte tablets that dissolve contain them. Also Coconut in all forms and water melon. Magnesium Miracle book is worth a read - the author says too much protein can deplete Magnesium that is essential to more than half of metabolic processes, so some slow burn carbs are recommended.

Have you actually been tested for diabetes (HbA1c is the usual test as this gives a picture of how your body is handling sugars over a period of months)
Have you looked into glycemic index - this is about how quickly your good is converted to sugars in the gut - slower conversion can help to keep your blood sugar levels more constant and lower and reduce the impact of insulin resistance.
You do actually need some carbohydrate in your diet - though the amount of carbohydrate in foods does vary and modern diets do tend to rely too much on carbs.
Have you asked for or looked at the possibility of consulting with a dietician?
What are you most recent blood test results
TSH, FT3 and FT4
FT4 needs to be towards top of range
FT3 at least half way in range
All thyroid tests should ideally be done as early as possible in morning and fasting. When on Levothyroxine, don't take in the 24 hours prior to test, delay and take straight after test. This gives highest TSH, lowest FT4 and most consistent results. (Patient to patient tip, GP will be unaware)
If also on T3, make sure to take last dose 12 hours prior to test.
Essential to test vitamin D, folate, ferritin and B12. Always get actual results and ranges. Post results when you have them, members can advise
Hashimoto's affects the gut and leads to low stomach acid and then low vitamin levels. Low vitamin levels affect Thyroid hormone working
Poor gut function can lead leaky gut (literally holes in gut wall) this can cause food intolerances. Most common by far is gluten.
According to Izabella Wentz the Thyroid Pharmacist approx 5% with Hashimoto's are coeliac, but over 80% find gluten free diet helps significantly. Either due to direct gluten intolerance (no test available) or due to leaky gut and gluten causing molecular mimicry (see Amy Myers link)
Changing to a strictly gluten free diet may help reduce symptoms, help gut heal and slowly lower TPO antibodies
Ideally ask GP for coeliac blood test first

Have you tried unfiltered apple cider vinegar, march? Just a couple of teaspoons before eating accomplishes several things including blocking some starch. I think starch is worse than sugar. You can dilute it or not. And you ARE eating lots of good fats, not unsaturated fats. This helps your body to learn to burn fat for fuel.
