I must admit I do crave sugar on T3 shortly after I take it but I don't normally go low.
My sugars were all over the place and was about to be diagnosed and treated for diabeties but this reversed/settled as soon as I went gluten free but not sure if the same applies to you. It can indicate diabeties so definately worth checking out. I think your levels can get very low after they have gone very high or are more unstable. It might be worth getting a cheap blood glucose testing kit from the pharmacy to test for a few days and get a clearer picture of what's happening.
Until you figure it out, in the meantime you can eat smaller meals more often (five/six meals instead of 3 and watch the things that spike your levels to stabilise it a little more.
Not backed up by anything but just an inkling - might be worth getting your cortisol checked to see if adrenals are fine.
As per usual, making sure you diet is sufficient and you're not deficient in anything is always worth ruling out.

Prior and after being diagnosed with Hashimotos I have struggled badly with blood sugar. In my case I'm not sure if it was linked with T3 as I had it prior to the diagnosis and when I started on T4 only.
The things that have helped me is to eat every 3 hours or so and to include lots of fats in my diet and cut out as much sugar as possible.
I've also started supplementing with cinnamon which has definitely helped me
I am hypoglycemic, have been most of my life. I generally stay on a low carbish diet, but am now prediabetic. I started a really low carb/ketogenic diet a month ago and my hypoglycemic symptoms have pretty much disappeared. And I'm starting to have more energy. I also have been on NP thyroid or previously Armour for a long time. This diet seems like the answer for me.
