The diet that suits you best, normally. Depends what you want out of a 'diet'. Are you talking about losing weight?
As a general rule, you need plenty of protein and plenty of good fat : olive oil, animal fat, butter, avocados, nuts, etc. - but no seed oils. Plenty of fresh fruit and veg, some carbs, moderate fibre, low sugar and don't skimp on the salt.
The only absolute no-no is unfermented soy : soy oil, soy flour, soy protein, etc. So, that means that most processed foods are out! In order to avoid the soy, it's best to cook everything from scratch.
Some people find that a gluten-free diet helps them enormously. Others prefer a dairy-free diet. And some do best on both together. It's all a matter of trial and error, to find which pattern of eating suits you best, because we're all individuals, and there's no one-size-fits-all miracle diet for hypos, I'm afraid.
