Stress can mess EVERYTHING up. Yes, stress is not good for your thyroid or for the conversion of T4 to T3, plus it affects your adrenals, so it is not your imagination.
Even a person with a normal thyroid function can have hypo symptoms under stress, so clearly if the thyroid is already underactive this will be magnified. This is very interesting:

This is very useful because it helps us to be aware of the danger situations and try to handle them. The bit about blood sugar is interesting, too. It opens up the possibility that you can maybe cope with the stress better with a nutritional approach, it would not be a quick fix but long-term could help you handle the situation.

You need to stop the cause of the stress - The Bullying - why is this being allowed to go on, do you not have a manager to report this to.

There should be a confidential phone line to report such things in your work, as if I remember you correctly you also work for the Police.

Because in the role you are in, and with the medical condition you now have, you are going to be all over the place. It's natural. It might be worthwhile getting your cortisol and adrenal levels checked to make sure they are functioning properly. Stress knocks everyone, particularly when in a stressful job, and even more so with a medical condition. I was advised to make the leap from Staff to Officer, before I was ill, and turned them down flat - I see what it does to "normal" people.
You need to really push your HR/Occy Health regarding the stress and bullying you are having to cope with on top of your recognised medical condition. If you resign due to them not making reasonable adjustments or being pushed out by colleagues, that is Constructive Dismissal. They need to get their finger out and do something. Unfortunately HR only ever understand threats like "constructive dismissal" "grievance" and "employment tribunal".
And never be afraid to get signed off with Stress! If you need the rest, then take it, before your body decides to do that on it's own.
