As maize tortillas are a good alternative to gluten-free bread (which I hate), I mentioned on here recently that I made my own and, in response to another networker asking me for my recipe, I posted one from a TV website with the same ingredients, cooking times etc as mine. I did this as I don't actually weigh out or measure any ingredients when I make them and assumed it would be correct.
However, thinking that I ought to check it out, I followed the TV recipe this morning and knew the quantities were wrong as soon as I got them in the bowl and, sure enough, the tortillas were a disaster.
So sorry for misleading you all and I hope nobody's tried out the recipe yet.
What I do is put masa harina (real-deal maize flour), olive oil, salt and water into a bowl and mix it until I get a pliable dough that holds together well. I then shape the dough into balls, flatten to about 3mm and fry in a hot pan for about 1 min each side.
You can buy masa harina from mexgrocer.co.uk and they also sell ready-made tortillas which contain only corn, salt and water.
Don't buy them from a supermarket as all those that I've seen are made with wheat and have other unsuitable additives.

Yes, I can't eat any of this supermarket 'gluten-free' stuff either, people forget that it's mainly aimed at coeliac sufferers not ibs-ers. There are always other ingredients in the products that aren't suitable for us, e.g. skimmed milk powder, concentrated fruit juice (probably apple), plus rice flour and rice starch and I can't 'do' rice in any shape or form.
Thanks for the links and the recipe Roz, Mexican food always goes down well in our house and it would be good to be able to eat it without worry. I wonder if ibs is a reaction to all the added extras in food from the supermarket. On holiday in France last year, I ate white bread for breakfast and lunch every day and did not suffer any ibs symptoms, yet cannot eat bread here in the UK. Even eating it once, I suffer for over a week. So, to have a recipe for tortillas and where to get the ingredients is brilliant.
If you like Mexican food then this is definitely the website for you and I can highly recommend their ready-made tortillas, I always keep a pack in the freezer for when I'm short on time.
I think there's a lot in what you say about food additives, I never realised how much c**p gets into processed stuff until I started paying close attention to ingredients' lists.
I use a breadmaker and can manage to eat bread made in that a couple of times a week without any probs, but, like you, a slice off a bought-in loaf will give me long-lasting symptoms.
It's not easy preparing meals from scratch all the time, but I do give it my best shot as I know what's gone into them.

Thanks Roz and thanks for starting this thread as I am starting to learn from other posts, particularly Bilabunny on how much rubbish is in bought bread - think I may be buying a breadmaker!

Not just rubbish in shop-bought bread either, there's some dreadful stuff gets put into all processed food. I agree wholeheartedly with Bibabunny's comment on the effect they can have on our health especially when, in today's busy world, we all rely on them at least some of the time.
Thanks Roz and I will certainly be looking into making my own. It's so helpful being a member of this forum as we all help each other out in some way or another and understand how each other feels.
