Do you experience times where your bowel movements are consistent and then all of a sudden they look different for a few days then go back to normal?

Yes I get the same. I can go days, weeks or 4 months etc with perfectly normal bms and no real IBS symptoms, except one that is there all the time (letting out a load of wind when I first wake up in the morning!) But that symptom doesn't bother me.

But whatever, I still stick to the simple fairly healthy diet that I know works for me and don't start eating curries and chillis etc.

So it was always disheartening when the "IBS came back" as I was naive at one time and thought it had healed, disappeared, etc. But now I've got used to it and accept it and am never conned by it anymore.
