I haven't followed low FODMAP yet but have an app on my phone. Peeled potatoes though are a soluable fibre food which as far as I'm aware is what low FODMAP is. Have a look at soluable fibre online.

Well the white potatoes themselves are low fodmap, yes. You need to be careful of fat however, as fat will exacerbate symptoms of IBS as well.

As long as you are not sibo then potatoes are off limit - it's all very confusing. I had potato chips and they affected me. Plain corn chips were better (no cheese type ones the natural ones)
