Sorry to hear your problems. I don't have direct experience but I have heard that Dragon is good software for this. If you have Microsoft Word then it might be worth trying that before buying anything. It now has a transcribe function. You would then need to copy and paste text into wherever you were wanting to type so this option only works if you can hold down Ctrl + C followed by Ctrl +P to copy and paste.

If you got an apple they do speech to text. Theres also dragon but that depends on your accent, i tried for ages but failed with a strong welsh accent. Depending on where you live you can ask for a referral to speech therapy and ask them to refer you to the technical communication team they have all sorts of gadgets and help.
