Jerry has it written on his post but I don't know how to take a link. So here's a copy:
110g Gluten Free self-raising flour
55g ground almonds
100g brown sugar
110g butter
2 eggs
110g raisins (I used sultanas-all I had.)
drop vanilla essence (I used 1/2 teasp.)
pinch of mixed spice (I used a teasp.)
Whizzed in a food processor (I mixed by hand.)
Bake approx 20mins. (Mine took 30 mins @ 180)

I love it. We have a recipe for breakfast muffins that includes oat flour and unsweetened chocolate. With yogurt, fruit, and hot coffee, it is to die for. Love the photo—thanks!

Here’s what we use: 1.5 cups oat bran,1 cup skim milk, 1/2 c. plain non-fat Greek yogurt. 3/4 c. unsweetened applesauce, 1 large egg, 2tblsp honey, 1.5 tsps vanilla, .5 c artificial sweetener, 6 tblsp dark cocoa powder, 1 c.whole wheat flour, 1 tsp. baking powder, 1 tsp. baking soda, .5 tsp. Salt, and 3 tablespoons mini-chocolate chips. Using a muffin tin, cook as you would any muffins. Of course, you can add raisins, nuts, or whatever you like. We freeze them and—Voila!—30 or so seconds in the microwave and breakfast—usually with fruit, yogurt, and hot coffee—and breakfast is served. Enjoy!
