There is a very good book with a lot of low carb high fat recipes "The 8 Week Blood Sugar Diet recipe book" by Dr Clare Bailey. My husband was diagnosed with type 2 diabetes which he has managed to reverse using recipes from this.

Potatoes used to be our staple. We now instead use a lot of cauliflower which is low carb & low GI so fills you up. Cauliflower can also be mashed & used instead of mashed potato, or chopped into small pieces using a food processor & used instead of rice.

Thanks for that, never thought about mashing cauliflower, or instead of rice which I love!

Will have a lookout for the book.

It does depend of course on what foods you like or dislike...and like you love rice...I don`t like cauliflower so it would be a no no for me...carbs that are white I have told myself are the enemy, and they will turn to sugar...I haven`t totally cut out rice or noodles...just eat a much less of a portion...bread I have cut out and what I call plain boring potatoes!....only the odd roastie…..have plenty of different salads, which is easier in the summer ….not too much fruit....my go to as I have said on here before is nuts...almonds.....

Today it will be a meal done by OH which will be chicken stir-fry....plenty of veg sliced up!...look online or get the books (library) it helped me.....

Good luck....

It's quite surprising; the cauliflower "rice" doesn't taste like large cauliflower pieces & takes on the flavour of whatever you have with it.

Ok, will give it a go......feeling very full right now, had lots of veg and chicken in stir fry.......always tastes better because O H cooks it.......just as well, have the dreaded fatigue today!😞

Always tastes better whoever else cooks don't you agree? Sorry about the fatigue, hope you feel better soon! :)

Thank you...yes it does taste better when cooked for you.....I feel like I'm walking through treacle at the moment.....and the heat doesn't help😞

The heat doesn't help - just take it easy it won't last that long - enjoy!

If you use a food processor and make the cauliflower as you would mashed potatoes, adding some sautéed onion and a bit of sour cream, you won’t know the difference. I serve it every Thanksgiving holiday and everyone loves it. Much lighter tand potatoes

It isn't as low carb as cauli but celeriac makes a wonderful puree too.

Check out Pinterest by topic or Keto. Also search for Google Cauliflower Rice which is excellent and Loaded Cauliflower and many more other recipes. you can even make keto friendly ice cream with cauliflower.

Have seen the book and will have a go but although I like cauliflower can't stand the thoughts of it mashed - yuk - thinks it's the smell and consistency, I once bought it ready chopped as a substitute for rice - never again.

Congratulations to your husband!

I hope you enjoy some other recipes in the book

Telian in reply toJanstr

Certainly will - sorry it sounded so negative of me but when you really don't like something.... you've inspired me to get the book even though I've seen it around..

I didn't take it as negative. There are alot of non cauliflower recipes in the book.

Have you tried Pinterest? I found some good recipes there. My go to foods are eggs with extra egg white at breakfast. Avocados are good any time. I stay away from bread and grains and white potatoes and pasta. I make home made chicken soup and add book choy and arugula. At first I avoided the carrots in the soup. I don’t worry about them so much now. I also use the white meat of the chicken for chicken salad spiced with lemon, a bit of cilantro and chopped almonds in addition to celery and mayo. I also have eaten lots of fish. One of my favorite new recipes is shrimp with cilantro lime sauce and roasted garlic. I believe that came from Pinterest. I’ve learned to make chunky guacamole using Roma tomatoes seeded and chopped. Roma’s aren’t as sweet, so less sugar, less carb. My go to food for snack are almonds.

Once you give up the idea of sandwiches, it gets much easier.

Good luck.

JanboC profile image
JanboC in reply toHindags

Thanks for this, unfortunately I don't like avocado, and do avoid sandwiches. I am having greek yogurt and strawberries for breakfast, salad for lunch with one slice of Hovis low carb bread (with lots of butter!) for lunch. My downfall is crisps, which I could eat all day, but I limit to one packet a day for a mid afternoon snack. My main problem is the evening meal for my hubby and I. I don't feel it is fair to impose my diet restrictions onto him, and it's a nuisance and tie consuming to make two different meals. I struggle with nuts due to wearing dentures.

Longtimer profile image
Longtimer in reply toJanboC

Don`t go down the crisp aisle!!

JanboC profile image
JanboC in reply toLongtimer

Can't help it! Seabrook crisps for me, I know I shouldn't, but they are an addiction, lol

Rugger profile image
Rugger in reply toJanboC

Seabrooks are made in Bradford, where I live - I have one packet a WEEK! What about cashew nuts as a snack - they're quite soft?

Are you local? We have a support group that meets in Leeds and Ilkley.

JanboC profile image
JanboC in reply toRugger

Yes they are, I used to be a taster for them. I can't eat nuts really, due to dentures, bits get stuck underneath and then I get a lot of mouth ulcers. I struggle with anything that has seeds in them as well, but I persevere if I can. I am in Huddersfield so Leeds would be more appropriate than Ilkley. I wasn't aware of one in Leeds. Can you give me details please

Macademia nuts excellent, soft. 10-12 are one serving.

This is a good link which PMRpro posted dietdoctor.com/low-carb. I have also lowered my Type 2 readings, and lost a bit of weight, following the LCHF way of eating. The recent programme The Truth About Carbs on BBC i-Player is very interesting too. There are also Pinned Posts on the right-hand side of your screen for more info. Happy reading!

I struggle with lunch at work. My fav when I have time is chopped apple, chopped celery, chopped walnuts, and chopped canned pineapple. Dressing- plain yogurt.

JanboC profile image
JanboC in reply toConventCassie

Sounds yummy, but I thought apples & pineapple were high in carbs?

Seeing as I'm inflating like a zeppelin, my advice is eat nothing nice and lots of revolting things. If you drink enough red wine, everything tastes better eventually. But from blimp land, I guess I'm not qualified to comment 🤐

Google low carb diets - you will find loads of websites with ideas and recipes for reducing carbs. dietdoctor is particularly good with illustrations of low, less low and high carb fruits, vegatables and so on which make it very easy to see at a glance how to go about things.

dietdoctor.com/low-carb

It probably helps to keep a food diary because it is all too easy to think "I must have my treat of ..." and that packet of crisps tips your lovely diet over into rather more carbs than you would dream! Salt doesn't help when on pred either!

I don't ask my husband to eat what I eat - just as I don't eat his favoured Wienerschnitzel, fries and other such things. As often as possible I cook meat without too much in the way of additives and serve mine with salad or roast veg while he gets fries (don't ask, he's survived the big C twice, how can I argue?)

Just thought I would tell you, that a few with Type 2 now do not have Type 2 and others who did not have diabetes but changed their diet have lost weight and one has lost actually lost nearly two stones.

The best bit of advice?

Drop the plate size............it fools you into thinking you have eaten your normal portions, when you have not as you could not get what you put on the bigger plate on the small one.

Us humans are a wonderful mismatch :)

JanboC profile image
JanboC in reply tojinasc

I don't have diabetes, just GCA, and my weight is ballooning due to water retention, and diet. I have switched my dinner plate to a salad plate! Except for when I have a salad of course. Strange combination aren't we?

I just found this great resource

1/2 Apple, slice or two pineapple. You need fruit.

PMRpro profile image
PMRproAmbassador in reply toConventCassie

No you don't - veggies have everything fruit has with far less sugar. Quite a few people have done low carb - they thought - but didn't lose weight. When they kept a diary and worked it out, they were eating fruit which counts as a lot of carb.

ConventCassie profile image
ConventCassie in reply toPMRpro

I didn’t mean you “need” it need it. You’re right. But I need it psychologically. I went 10 years without a banana after I lost weight. And that won’t be on my grocery list anytime soon. However, I noticed in the Pioppi Book even Dr. Assem has an Apple or an orange for breakfast. But then we’re in the “don’t need to loose group”.

Apparently kumara (sweet potato) has a carbohydrate load than ordinary potatoes

Hi JanboC. Like yourself, I have researched and found some lower carb replacement for the types of food I "like" to eat. replacing potato chips for Swede and Carrot chips coated in olive oil and seasoned before roasting in the oven. I am yet to find a workable solution to bread, I am sorry to say. Plenty of recipes of course and lots of videos showing how to produce it. But nothing that actually comes out formed as bread. Burgen Soya & linseed at 11.4 grams a slice seems to be the lowest ( real bread ) that I have found so far. IF anyone has found a commercial bread that fits the bill and does not cost the earth, please let me know. I did come across something this morning while searching low-carb that is interesting and although I did not know of the name, ( sous-vide ) I had been using this method for some time to keep my slow cooker from getting food baked onto it.

The cauliflower rice, and mashed potatoes have been a life saver for me. Also Kale chips. Recipe: Cookie sheet, parchment paper. Lightly brush coconut oil on both sides of kale.....season one side-I sprinkle very light sea salt and light pepper "LIGHT". Set oven @350 my oven takes about 10 minutes for kale to become crispy I use medium size leafs. Walla takes the place of chips for me. I also make cloud bread. You can you tube recipe.

I know the feeling and after gaining even more weight on my low ( to no ) carb diet, I am now going to switch to a vegan diet and see what results I get from that. I have to admit that my reasoning has been swayed by a program on Netflix that shocked me.
