Hi, I think for all of us we try different things to see what suits us and our PBC. It seems that we are all of us different and at different levels in the disease. This is what worked for me.

I have reduced salt intake, cut out sugar have the very rare and occasional chocolate. I never have coca cola (well maybe once a year :-) )

About 4 years ago I decided to get my weight under control and stopped bread, pasta and rice, ate a much more vegetable based diet cutting out red meat completely. I drink a lot more water(which I believe helps with the itching) I do not eat any supermarket bought processed foods not even ham or sausages. In that 4 years I dropped 20 kilos and changed my diet for life. It was a long slow process but I now find that I do not want the type of foods I used to have. My breakfast usually is oats and kefir as I take colestyramine for the itch. Lunch at this time of year are lots of lovely crispy salads to ring the change I make a red cabbage salad with walnuts and raisins added. In the winter it is home made soups. Evenings are either vegetarian based or chicken or fish. I have now reintroduced potatoes and pita breads but still rarely fancy rice or pasta. I always have plenty of protein to keep me full. I now understand the negative research into eggs some 30 plus odd years ago has been proven to have been flawed so eggs are back on the food list which is great as I like omellette and boiled eggs.

You need to bring out a recipe book as I would love to eat like you. I eat very little meat and fish but eat far too much bread pasta and rice.

Basically just follow a healthy lifestyle, eating mostly non processed foods, limit sugar intake, avoid fatty foods, no raw shellfish i.e., like oysters. Incorporate exercise into your lifestyle.
