It's often the case that OCD responds in this way. Just as you want everything to be exactly right and go well, OCD throws obstacles in the way by making extra demands on you.
Good for you to be opening a business. Once it's got going, the panic should subside.
Keep in mind that you don't need to get everything exactly right. If things don't always go to plan, they may actually go better than to plan. Apart from that good luck with the new venture.
