Marinades are what you want. The items you put in will help break down the meat and/or just flavor it. Vinegar is a great base. To that add water, oil, sugar, spices what ever you are looking to do for flavor. You won't taste the vinegar. 1/2 cup vinegar, 1/2 cup water and if you want add oil then season up as to what ever flavor you want. Savory: marjoram, oregano, basil. Fresh basil is best and keep the leaves on the food when you cook it. Spicy: add red pepper, Tabasco, hot curry powder. I used to use orange juice and lemons also for a marinade with no vinegar water, sugar and cinnamon and allspice. Great for holiday turkey.

I have used this on salads and as a marinade with good success I got it from All recipes site a few years ago.

Happy cooking

⅓ cup olive oil

1 teaspoon lemon juice

2 cloves garlic, crushed

1 tablespoon Italian seasoning
