It’s not really a soup day with the warm weather but I really wanted lentil soup for some reason. I made it curried with fried onions, fried paneer, red lentils and swede. Before serving I added creme fraiche, fresh tomatoes and spinach. The salad was also tomatoes and spinach with egg mayonnaise. 550 cals total, 18g carbs, 15g fibre. Think I’ll store that lunch option to use again 😀

Btw, I have always wondered, and hope you don't mind my asking, do you raise sheep? I did years ago on my hobby farm. It was enchanting having those charming animals. I wish I'd had My Corgi, Brexit then. That would have made it even more fun. 🙂 Lambing was amazing.
You will know swede as rutabaga (a much better name than swede). Paneer is an Indian cheese It is a non-melting soft cheese made by curdling milk so is best to fry it as it keeps its shape. I bought feta, halloumi and paneer cheese as they last for months in their packets, which is ideal when you don’t know when you’ll be able to get more food 😀My neighbour raises sheep 🐑 Lots of cute lambs around now and I have helped out with lambing before and loved it. I also had a job working with sheep for years but it was some time ago. 😊
