I was never keen on pork scratchings until I was served some on the side with a pork roast (heritage-breed, pastured pork). It was really, really good!
I only used to buy the odd little packet in a pub with a pint of beer, that was a long time ago. But since my wife started making them we all love them.
Can we have your wife's recipe please?
Sure, fry on low heat in for about 1/2 hour in deep oil enough to just covers the pieces of fat, turn of the heat and leave in the oil for one hour and then turn on heat again fry again until golden brown.
The pieces you see in the photo have been cut in half after been cooked.
To be honest this only what I have observed..but I think that's all there is to it.
