Basically, as you increase your carbs, your weight loss will slow down and eventually stop.
If you increase them too much you'll start to put on weight again: for most people, that point is somewhere around 100-150g/day. But it varies from person to person, so trial-and-error is the only way to find out what your personal limit is.
It's important to realise that, being fat-adapted, your body will cope with the occasional carb-heavy meal much better than it ever would have done in the past. Yes, it might store some fat, but it'll burn it right off again, because your insulin response is now back where it ought to be.
As long as you keep your carb indulgences to once or twice a month, even a massive binge will have little effect on your weightloss. However you should find that you're physically unable to actually binge. I occasionally get a pizza craving, eat about four slices (which makes me feel a bit queasy) and then that's me done for a few weeks or months!
Short answer: stop worrying and enjoy some toast occasionally. Lentils should be no problem at all. Monitor your bodyfat and, if you see it creeping up, back off a bit. But you'll probably be fine.
