I've lost eight stone in just over a year and seem to have hit a plateau as I haven't lost anything for four weeks - I'm 55 and going through the menopause - I don't know if this could be a factor ? I'd be grateful for any advice !

I'm sticking to 1200 cals a day - 2 slices wholemeal toast for breakfast a cereal bar for lunch and a salad for dinner - usually salmon or tuna sometimes a veggie burger - a diet yoghurt and a small banana - I'm a vegetarian but eat fish + drink at least 2 ltrs of water and one or two coffees no sugar and a little skimmed milk

I've been eating low carb high fat for about 20 months and have lost 4.5 stone, as well as improving my overall health and energy more than I thought possible.
I hit a plateau over the last few months and decided I needed to do something to restart. I had some success with an egg fast. The idea is to eat eggs, cheese, and healthy fats (olive oil, butter, coconut oil, etc), which gives your liver the ingredients it needs to properly break down fat so it can leave your body.

I followed this plan for 3 days and then did 2 days of transitioning back to normal LCHF. I lost 5 lbs in a week and have just about maintained that loss over the last two weeks.

You mentioned toast, granola bars, and skimmed milk, which are not usually part of a low-carb plan. You might try replacing those with low-carb alternatives. For example, I have an omelette with spinach for breakfast, and salad with olive oil and vinegar for lunch. Dinner is often fish with a generous side of broccoli and cauliflower, or courgettes and mushrooms, or any dark green vegetables. I opt for whole milk or unsweetened almond milk in my tea.
Bananas are relatively high in carbohydrates, as are sweet potatoes, pasta, beans, and a lot of the low GI foods mentioned above. They may be low-GI but they are not going to help you lose weight if you are trying to follow a LCHF plan. There are plenty of other foods that will be both diabetes-friendly and truly low carb.
