I already live on a budget but decided to try the £1 daily budget challenge, basically trying to get 3 meals within budget per day. I'd seen this challenge on various social media platforms and thought with the current global situation it might be worth a try. (I am very aware that many people don't actually have a choice about the limited amount they can spend or what they can spend it on).
I wanted to keep it as healthy and LC as possible which in itself was a challenge. I spent £1.80 for 2 days worth of meals:
L:Baked beans / Sardines on toast without butter
D:Carrot soup-used 2/3 of 1kg pack.
Sliced and boiled carrots with sachet from noodles as flavouring. When tender, put carrots in blender until smooth. Returned to the pan with extra boiling water adding half the noodle block. Very filling🙂
Still had carrots and bread left over, which I froze.
