Thank you for reminding me that it's been a while since I posted. I have been reading the posts everyday and I am very impressed with the way other 'posters' are so positive, whatever their difficulties. My problem seems very lightweight compared to so many people and I am not a very positive person although I am working on that. I am looking at trying to cook from scratch (with Christmas in mind to start with). The thought of all those sausage rolls and pork pies is quite a daunting prospect. Trouble is with the whole family coming on Christmas eve for a buffet lunch, I will be the only one here to finish the leftovers as my husband loves his food but is weightwatching. What I need is suggestions for some healthy nibbles. I have a recipe for sausage rolls made with filo pastry. Anyone any ideas for a not very good cook.

I'm from Kent, unfortunately not the Medway town where there is quite a large Indian community. Samosas sound like a good place to start, so I will look online for a recipe that is a healthy option. Thank you champak045.
I was saving a seasonal food post for the end of the month, so will look it up on my computer & post it shortly, though your folks might not be keen on veggie food, either.
Hidden A friend's Indian work colleague was married to a professional vegetarian caterer. They made the most delicious food for my 40th birthday party, including samosas. I'd really love this for Christmas, but the English often expect boring traditional things to eat.
I entertained a group of veggie friends after a short boxing day walk. To make it easy for myself, & warming for everyone, I made three giant pans of soup: lentil, squash & tomato, minted pea, & spicy parsnip. I did a lot of the preparation the night before, so all I had to do the next day was turn the heat on & stir regularly. I baked rye bread, & used some half-baked ciabatta, & some other fancy breads with olives & nuts. Perhaps add a cheese board & a dish of fruit. A sticky upside-down cake, & a vat of mulled wine went down quite well, too!
Most people who are not diabetic are fine eating potatoes in moderation, & combined with low GI foods. I don't eat meat, so always have vegetarian samosas & everything else.
Thank you champak045. Making a selection will add variety, and I can add a plate of them to the filo pastry sausages and plenty of salad so far planned.
