I hear so much about gluten damaging the villi whether immediately or taking ages, what in all honesty does happen? and how long does it take to cause damage?

Gluten affects coeliacs in many ways the villi are just the tip of the iceberg and can be flattened for other reasons.

Does this mean folk with CD have a problem with soy ?

Being allergic to soy is not uncommon, but it does not mean that because you have CD you will be allergic to soy.

If you are very sensitive many soya milks contain Maltodextrin which can be a wheat derivative.
