Coffee has got nothing to do with gluten, the caffeine acts as a stimulant to your bowels and can just be too much for some people. You might be OK with de-caff.
Unfortunately lots of things can give you gluten-type symptoms and not have gluten in them.
Barny was there milk in your coffee? If so could be a reaction to this.
Agree on the previous poster's comments around coffee. Coeliac Disease is an autoimmune reaction to proteins in grains. Coffee beans do not contain these proteins (unless cross-contaminated) so the two are not linked.
However, caffeine is a gastric irritant and coffee also contains molecules which increase stomach acid production. De-caff contains the same molecules so you may find this does not help.
If you get a reaction to coffee, best to avoid it
