Can anyone tell me how i can modify this recipe without gluten? :)
Gluten free soy sauce and rice noodles and check the ingredients on the curry paste or use a gf one
Would this be o.k......... it does contain maize flour?
that Patak curry paste is fine. You could also use buckwheat noodles or even make yourself very thin pancakes and cut them into noodle shaped strips.

Rice noodles ?
I would substitute the noodles with gluten free spaghetti or you can get Udon rice noodles which are very good for this type of recipe. kingsoba.com
their noodles which are brown rice, are brilliant and they come in Gluten free usually in supermarkets down South but try this web site. Good luck, I love Chinese food and the Tamari soy sauce is great.
Use a gluten free soy sauce or aminos, and Asian rice stix or rice noodles. And yes do check the curry powder for starches, good curry powder shouldn't have starches in it.
If you love Chinese/Thai food and miss having the sauces to put in with your chicken or veg - I just make my own by mixing about half a Knorr stock cube with boiling water (about a cup full), splash of chilli sauce, tomato ketchup and a little honey and ginger. Then thicken this with desert spoon of corn flour. Once your meat and veg are cooked in the wok or frying pan pop the sauce in and stir until it has thickened, adjust with water if too thick. My husband now prefers my sauce than any of the bought ones even though he is not Coeliac. Good luck. x
I read in another post on this site that you have to check the packs of Bean Sprouts as not all are gluten free, possibly down to the manufacturing method.
I use Blue Dragon Sweet chilli dipping sauce, don't find this too hot, just to my liking. You could always add fresh chilli if you like it hotter.
