Hi Gluten Hater read our response to your similar question.

Ref muscle spasms and weakness this can be a mixture of things from lack of exercise to low vitamin / nutritional levels. For example low vitmin D (common in coeliacs) is well documented and can result in severe muscle spams. I had back and neck spams and ended up in casualty many times yet no-one made the connection with my low vit D until I was diagnosed as a coeliac. Likewise low calcium and magnesium can cause cramps e.g. leg/ feet cramps.

As always if in doubt consult a Dr for expert advice. It could be a case of simple vitamin / nutritional deficiencies due to coeliac that are causing these problems or it could be something else.
