Hi

We all have to monitor our levels of gluten and be suspicious of everything even when it says gluten free, but you also have to monitor the amount of new foods you substitute for the gluten free ones you used to eat

The above website has a vast amount of information on foods from potatoes to butter, whether its accurate or up to date i am not sure but its a start if you want to monitor how much of each vitamin you are getting each day or salt and protein etc.
