You have my sympathy - before coeliac I used to enjoy finding good bakes and trying all the different breads.
I have tried most of the bought GF breads - and they are not bread! I make my own rolls now, and enjoy them. Non GF friends are really surprised when they ask what they are made of!
I found the recipe here: dietdoctor.com/recipes/the-... When recipes say almond flour they work perfectly well with ground almonds - I am not convinced there is any difference
Keto and other low carb recipes are very useful for GF cookery!

I missed potato cakes too but happily i make my own now and they are nice.
I find bought Gf Bread taste better frozen then toasted.
I've bought Promise brand bread in Sainsbury's. It's by far the best I've found. Soft and tasty. My favourite is the seeded one, but they also do a quinoa, and another one.
I did too until I found Gluten-free Warburton's White Bloomer. Maybe look at the ingredients list and see if this would be suitable for you?

I am using a company called the Incredible Bakery, based in Kettering, Northamptonshire, who only make gluten free products. Lovely bread, several varieties , and other products too. Delivered by DPD and I slice and freeze them myself. No probs now with bread, and their loaves are larger than many, but still not cheap. It is nice to be able to enjoy toast and sandwiches again….
If you're in the UK, try Warburton's bread. It is the best I've had, the nearest to 'real' bread.

Yes, the craving for bread can go on for years until our brain and body get used to the change. I have been GF for 12 years and totally grain free for 6 years. It is a battle at first, but after a while you don't even care anymore. Grains are not an important substance that we need in our diet. It takes time, just roll with it.
The best one iv'e had is M&S Tiger loaf and rolls toasted. Really good.
Yes, we all have that problem in the beginning. It's like anything we are attached to and our body and mind responds when it is taken away. It took years for me to get to the point where I don't care anymore for bread and don't crave it. In fact, I don't even want it anymore.
