Hi tug, I have a really simple dumpling recipe that doesn't use suet:

150g Rice flour or any gf flour

2 tea spoons of baking powder

2 large eggs

a little water

optional a few dried herbs.

Mix to a dough and put spoonfulls into boiling stew and simmer for around 10 mins.

These are suitable for vegetarians and are lactose free and easy peasy

Tried your recipe yesterday & just eating left-overs now. Thrilled to bits with results. Tweaked your recipe slightly.To try to fool the man about the house, I added some lard to replace the suet. I also added salt. He said they weren't doughy enough. I loved them. Thanks !

Just made theses with stew - lovely. Kids enjoyed them and no one could tell they were GF. :)

Nice one Jerry - I have missed dumpling with my Stew - it's one of my wifes best dishes but has been missing something since last october.

I have used Mrs Crimbles dumpling mix (just add butter and water) but have had to buy it online as it isn't widely stocked in the shops.

Mrs Crimbles mix is just a gf flour mix with gums added (psylium husk guar gum and xanthan gum) a raising agent and the cellulose is an egg replacement. So I am sure that it makes nice dumplings.

Ingredients: Cornflour, rice flour, potato starch, maize flour, sugar, soya flour, raising agents: sodium bicarbonate, disodium diphosphate, salt, psyllium husk, stabilisers: xanthan gum, guar gum, Hydroxy propylmethyl cellulose

Generations ago we passed cooking skills from generation to generation these days our kids show us how to shop on line and we have lost the confidence to be creative. I laugh when I see pancake mixes in the supermarkets...

And thank you folks, that's the recipe I use but you can make dumplings with fat and flour and the simplest dumpling recipe is flour and water + baking powder. Egg whites replicate gluten really well and that's why I use them.

To make dumplings by using fat and flour use 1/3 fat to flour eg: 2 oz/55g fat to 6oz/170g flour +baking powder.

The secret with dumplings is to add the water gradually so that you make a dough rather than a batter. And they should double in size so don't put them to close together.

You can get GF Suet, so I just change flour to GF and follow normal recipe

Vegetarian suet, rice flour mixed with 1/3 cornflour & salt - use recipe from old cook book which would have used lard suet - main thing is to do it quickly and handle little
