I went to my local railway museum recently. Feeling peckish I went to a stall with to die for cakes of several varieties for sale and asked if she had any GF (expecting to be told no). My jaw dropped when she told me everything was GF. We bought 3 different types between us and they were fabulous. I asked her which flour she used, saying I had not had much success mixing flours myself, and she said she uses Doves Farm for everything she makes.
I cannot use Doves farm flours because they contain to much gluten for me to tolerate. Otherwise my partner cooks using M&S or ASDA flours. Having recently been in hospital and stating that Dextrose is made from wheat I was called " a real Coeliac".
ASDA and M&S do not have their own mills so have to buy in goods from a miller and I thought that ASDA used Doves farm flour as the mixes are the same.
All certified gluten free products are within codex and that goes for Doves farm ASDA and M&S.
I find that M&S use palm oil in most of their gf goods and this acts like a laxative for me.
As for dextrose and all wheat derivatives we need labelling of wheat derivatives, which's now voluntary advice from the FSA. And Waitrose comply with this.
I use M&S and ASDA flours because they do not contain any ingredient from a gluten source or from a Formaldehyde Releaser I am very thorough in reading ingredient labels very thoroughly. Doves farm as Jerry knows contains up to 20 ppm of gluten. The eu regulations regarding the term “ gluten Free” does not apply to sensitive coeliacs. I was first diagnosed in Hong Kong in 1955 and went into remission ( according to the Australian Coeliac Society there are coeliacs out there that this has happened to). In 1962 a test confirmed no Coeliac Disease until 2007 following chemical poisoning confirmed CD, confirmed in 2011 HLA-DQ2, reduced folds D2, AGA 42. How were you diagnosed?

Hi Tetris I have tried most flours. I get the best results using Juvela .
My cakes are the same I use Juvela white mix and in the oven the fairy cakes rise but as soon as I take them out they just sink in the middle and go flat. Any ideas please. Also my soda bread seems very heavy not like a normal loaf . Any help much appreciated. I am Coeliac.
