Bringing foods back in

I have read a lot about cutting out all grains and bringing them back in one by one and letting the gut heal. Does this mean that maybe I'll be able to eat corn without reacting when my gut as healed?

Some people recover and you may be one of them. Usually it is a lifetime commitment. When you reintroduce each grain you know your reaction, so look out for your reaction, could be within 30 minutes. Be aware each person has a unique diet different but similar to everyone else. GF is an umbrella definition which is only part of the story. Corn (maize) can be some people's lifetime hated foodstuff. Finding derivatives of your reagents is a lifetime journey.

I can't eat rice cakes. I have even tried the very plain ones. I think it is more to do with the processing and perhaps contamination from another ingredient used in one of the other varieties. I would try just plain rice and just a small amount to start. It takes time for the gut to heal and be able to cope with grain. I use arborio, wild rice or brown. I also use quinoa a lot as this has more protein and can be used in the same way as rice. If you've made it yourself you know what you are eating and how it was prepared. 😊

I think I read that quinoa is a seed. I have a box ready to try. Living gluten free is confusing

Yes and very versatile. I buy the quinoa flakes too and grind some into flour. I do the same with buckwheat flakes and use a combination of the flakes to make porridge. Hope you find it good for you. It's all very confusing to start with but I found this site and searching the Internet invaluable.

It takes time to get it right but it is really important to get yourself informed about the food.

Have a look at Coeliac UK site, or read "Living Gluten Free for Dummies", "Deliciously Ella".

This site has also has some good ideas.

Even grains are seeds, but quinoa is from a different family of plants.
