Can anyone suggest easy GF supper dishes., please? My husband does not have a coeliac problem and I at my wits end to know what to cook for us both. This evening I am doing cauliflower, boiled potatoes, indian corn and frankfurter sausages in cheese sauce. I prefer one-dish meals if possible.

Hi Trenny, I'd cook your favourite meals that are gf and for both of you. There are lots of things that you can cook that are just one dish like cottage pie, hotpot, stew, casserole. Sometimes I bake a savoury crumble and thats nicer than a pastry pie as the crumble layer is thicker and needs a nice lot of gravy, its just half fat to flour, easy peasy. Another thing that I make sometimes is a gf quiche using mashed potato as the base and I put a layer of mash in a casserole dish and blind bake it with butter whilst I make the quiche mix up, then bake it, this is also really easy and is nice cold the next day.
You enjoy your supper, I think that you manage very well and your hubby is lucky to have you cooking proper meals...

How about
-sausage and mash with onion gravy?
-any combination of chicken breasts/thighs with a carb (eg potatoes/rice) with veg (maybe roasted i.e. whack onion/garlic/peppers/carrots/parsnips or any combo of these - add drizzle of olive oil and into a 180c oven for 45mins to an hour or longer after tasting) Add a carbohydrate.
-Masses of pasta dishes (we all eat my GF pasta.)
Finally our easiest meal which we've done for dinner parties and it works every time. Buy chicken breasts and chop into fingers then brown in a frying pan. Buy any good quality chicken Thai soup (we use Waitrose). Warm soup through, add the chicken. Buy Thai green curry paste to your taste. Bring to simmer point, check chicken fingers cooked (if they are approx even size this helps). Separate pan add one cup of rice to two cups of water for two people. Add salt to taste. Bring to boil and switch off heat, don't lift lid. Leave 10-15 mins and bob's your uncle a delicious meal.
Ps we use cornflower a a thickener and this means many of the meals everybody eats can ba Gf just by using cornflower instead of wheat flour.

LOL, I hear subtext here. What is it that your husband likes to eat that is now off your menu? Pies? What did you used to cook him before having to go GF?
Genius GF pastry (it's in the frozen section) isn't too bad at all. I've yet to find a decent pizza base replacement though.
Yes, you are quite right! I am fairly new to this. We used to eat lots of convenience foods - pies, meat balls, casseroles made with mixes, quiches, sausage rolls, waitrose's prepared meals, deserts like trifle, tiramasu etc. I am 85 and finding it increasingly difficult to spend long on my feet, cooking. I must make a list of your ideas. Many thanks, all.
I would stay away from corn and white potatoes and they aren't great for the gut. I've been GF for 15 years and am a nutritionist and recipe writer. Feel free to browse my recipes on coconutandwhat.com there are 130 so hopefully you will find something. Lots of one pot ideas too.
