Hi Trenny, there's a variety of sandwich fillings that are gluten free, like eggs, cold meat, tinned tuna/salmon. Then if you like spreads there's humous (chick pea spread) and Tahini (sesame seed spread)
Many pate's are gf and Tartex ones are vegetarian and I really like mushroom pate and on toast it's really nice too.
I eat nut luncheon in sandwiches/rolls sometimes and I buy it from Holland and Barrett and that is clearly labelled gf.
As you don't like lettuce but if you like cabbage you could buy or make coleslaw.

My staple is peanut butter and either peach jam or marmalade on toasted Udi gluten free bread.
Or forget the sandwich entirely:
Tuna mayo can also be eaten without bread.
Kale "chips" (or crisps) - strip the leaf from the stalk into a large bowl. Toss with olive oil and sea salt. Tip out onto baking sheet and spread into a thin layer and bake 20 minutes at 350 deg f (sorry in don't recall the gas mark or Celsius setting). Great source of folate and not at all like lettuce.
Roast beef sprinkled with a little salt and fresh sliced tomatoes.
Corn tortillas and salsa.
Tacos without cheese.
I love left over cold roast beef or roast leg of lamb with tomato for my sandwiches, I think Udi's tiger bread the best. I also make salad sandwiches with lettuce and used rocket leaves instead for a bit of zing.
Fidgetsmum - if you like Udis Tiger Bread have you tried Tesco's GF tiger bread rolls? They are own brand and come in a pack of 4. I found them to be a great texture and a pleasant taste.
We got some one day but cannot find them when we go shopping. our local Tesco is good but I think everyone who is GF here grabs up the rolls before we get there.
I am not a bread roll fan, hubby is. I prefer thinly sliced bread or toast for my sandwiches
My favourites both skip the butter/spread for something more interesting:
(1) Spread the bread with hummus then fill with avocado and grilled bacon
(2) Spread the bread with a light cream cheese (Philadelphia or a Dairylea triangle will do!) and a thin smear of Marmite, then fill with "dry" cucumber, by which I mean cut it lengthways to remove the centre so that your sandwich doesn't go soggy.
I thought Marmite was unsafe? Celiac.com says "yeast extract from brewer's yeast is considered unsafe for celiacs" - so it may be OK for those with an intolerance, but not for anyone with Celiacs.
And another one if you have leftover cold lamb from a Sunday roast. "Sheep dip". That's thinly sliced lamb with mint mayo. A 3:1 mix of Hellmans and drained mint sauce. Yummy!
