Has anyone got any recipes for gluten free haggis given I can't eat Free From products or oats? I am going to a Burns Night do and would like to join in properly!

you say you don't tolerate free from products. have you tried rough polenta/maize? it mimics oatmeal in texture so you might be able to substitute that in any haggis recipe (there are several type haggis recipe in search engine). It would also be essential to ensure enough moisture so adding more meat or egg/s would be an idea. Quinoa is also a good binder. you need to soak in water overnight then discard the water. add 5 parts stock/water to 1 part quinoa and simmer for 20 minutes. would advise egg/s to bind. my experience says that this doubles the volume from dry so halve the weight from the oats. it wont matter if you have an excess because you could use it for other meals. You could try this out by making sausages. Quinoa is available in Tesco but is not quarateed gf. happy 26th

Thanks for this helpful advice Hazel. I have tried polenta but unfortunately it made me ill. Also tried quinoa which I didn't think was very nice! But I will look up the haggis recipes and see if they could be adapted. Your tip to use leftovers as sausages is brill!

just thought of rice as well would need to boil and discard water. Have you thought you might also have IBS to starchy food. while rice is starchy the vast majority of its starch is removed by pre boiling and discarding the water. it would act better as a binder if after cooking you blitzed it in a blender/hand blender. quinoa would probably be ok when you add the haggis ingredients as that would alter texture and flavour radically. xanthan gum might also help for binding. just one teaspoon for the whole recipe.

I did think I would give quinoa a try Hazel for the reasons you suggested. I am going to a do and the hosts will be cooking this for me so I wanted to give them some ideas. I have never really considered that I could have IBS and neither has my doctor (I don't think I fit the profile) but I will look it up. Interestingly if I react to food that is not gluten or wheat the first symptom is usually heartburn and stomach and oesophagus discomfort. When I have accidentally eaten gluten or wheat - even minute amounts has a different reaction.

Don't know where you are but a butchers in Hamilton (near Glasgow) does it. So, there might be other butchers that do x

I live in the home counties but we have a fantastic local butcher. Not sure what he does in the way of haggis but I know plenty of people round here celebrate! Will be investigating.
