Sorry for my ignorance … what does the “excess PUFA “ I. Your post refer to? Not familiar with that terminology.

Olive Oil has proven itself to me! Just begin by replacing store bought salad dressing with dressings made with a high quality olive oil and herbs. I love that I can just pour it on!

I swallow 1 teaspoon of olive oil between meals and it makes me feel good. Maybe it balances blood sugar or just gives me stable energy, but for some reason it works.

That makes perfect sense. The body runs on glucose and fat. Olive oil is an omega 9 oil and is the easiest for the liver to use for energy. It goes directly from your gut to your liver and if your liver is able to operate normally it is mostly converted to ATP which is the key molecule that powers your body. If you feel less fatigue it is because you have a better balance of ATP to your needs. If the body needs glucose it makes it out of fat so blood sugar stays in control unless you overfeed yourself with carbs.

Thank you so much for the interesting reasons why evoo works. I just wish I could find something to lower cholesterol as I have that mthf gene and statins are hard on liver.

That is a challenge. When I was diagnosed with cirrhosis my hepatologist said to take 4 tablespoons of EVOO a day and eliminate as much saturated fat as possible. Not proof for sure, but my cholesterol dropped significantly on that kind of high fat low carb diet with emphasis on unsaturated fat. I don't have mthf problems so can't really speak to that but it would be a fairly easy experiment to see if it helped you.
