Hey there so I am new to all of this and have been just reading and researching lately to help myself and this affliction. I have read multiple posts about people recommending the Mediterranean diet but I thought a low carb diet was more beneficial for ARFLD.

Mediterranean Diet carbs..
Hey Cody - i've been on a very strict Mediterranean-like diet for the past 3 months now. I've lost approx 19lbs during this time (and i wasn't overweight to begin with. Went from 199lbs down to 180lbs and im just under 6ft tall). So the baseline is to completely eliminate sugar, refined carbs (anything white - white rice, white pasta, white breads), red meat / fatty meats, processed foods, alcohol and strive for plant based proteins at least 4 days per week and the other 3 days either poultry or fish. This is the baseline. Your starting point. And when i say eliminate, i mean eliminate. I have ZERO sugar. I don't even substitute with any sweetners like agave or honey. I used to put 2-3 spoons of cane sugar in my coffee everyday along with creamer. Now i drink it with just a splash of unsweetened almond milk. With respect to carbs, the key is to eat whole grains. Carbs are good for you and your liver. Whole grain carbs. I regularly consumer quinoa, whole oats and brown rice. I stay away from all bread even though i know there are options like Ezekiel sprouted bread out there. I would much prefer to have quinoa with some salmon or chicken for dinner or whole oats with almond milk and ground flax for breakfast. It sounds hard and maybe for the first week or so it is. I was really frustrated during the first week but then you sort of fall into a grove and it becomes addicting in a good way. I am probably a bit extreme/maniacal as if anything even has 1g of "added sugar" i refuse it. I sort of view it as poison so once you train your brain that way, its hard to consume "poison" right?. The hardest thing for me to give up has been my beloved red wine which i used to enjoy with dinner on a regular basis. I recently had my Fibroscan and im F0 with a 4.6kpa. My last ultrasound showed fatty liver back in late September so im planning to get another one done in the spring to see if i've managed to eliminate the fat. That is my goal. Once achieved then maybe, i will have red wine again on a very limited basis (1-2 glasses a week max). But i plan to stick with this regimented diet for the rest of my life. Good luck
