Fatty liver seen on scan, but not blood work?

I was diagnosed with fatty liver a year ago at 17 accidently after I had some scans for a kidney stone. It sucks because it's probably genetic since I am Hispanic and I love to eat rice/flour tortillas. Recently I begin noticing how my stool was yellow and floating after eating excessive carbs/red meat. Is this a sign of malabsorption? Idk what to do and what to eat. Anywho, the weird thing is that they told me that they saw fatty liver on the scan, but nothing appeared on the blood work. What does that mean??

It is quite common for fatty liver to develop over time and not show up in blood work. The liver enzymes are a measure of how many liver cells are dying so if the damage occurs over time it may not affect the blood tests. You have probably been told to adopt a healthy lifestyle which generally means a plant based diet. Here is a link to the general diet guidelines we support in case that may be of help to you.

Thank you so much :) this is what I am planning to eat mostly each week, can you tell me if it sounds good?

1 cup of green tea each day

Oatmeal w/ bananas and strawberries/all bran cereal -is bran okay?

Dried cranberries w pumpkin seeds/sunflower

Apple and bananas for snack

Chicken drumstick soup

2-3 eggs eaten per week

Avacado toast w whole grain bread

Occasional snack cracker like goldfish (under serving size)

If they didn't detect it, does it mean my damage was not severe so far? I feel fine albeit I have yellow stool after eating lots of processed foods, and have normal bowel movements if I eat well

Can't know for sure what the status is unless you have been evaluated by a liver specialist. It is hard to diagnose liver issues since you have had a fatty liver diagnosis it would be smart to get a second opinion from a specialist if you can. Stool color can vary for a lot of reasons so isn't a very good guide.
