I can tell you what I ate today and all I know is it was a low carb recipe form the Keto app and snacks - couldn’t begin to tell you a breakdown of it! We will just have to see - as I can’t start getting stressed about it ha
Definitely don't get stressed, what you are doing is perfect
I like numbers and charts and rules (geeky kid at school) and so this is just how I organise my eating. You should see my financial spreadsheets, it'd make your hair curl!
Seriously loads of people are very successful at this by just listening to their body. If you want to use apps like 'myfitnesspal' great! If not, you will still have every success
But to answer your question, because it takes so little time, I log my food to see how it breaks down into fats/carbs/proteins, and keep the amounts similar-ish to the one at the top of this thread.

Newbeginnings20 , you seem to be doing what's right for you. Don't change for now.
But what many of us are using to track our diets are apps/websites that let us log our food. The most popular is MyFitnessPal, and I am using cronometer and love it. There are many others.
The way I got started (and I would advise it) is by logging a few meals, or a day every now and then, not everything that passed through my lips. Amusingly, even that helped me lose a couple of kilos: I think having to answer to myself about what I was eating made me eat a little less.
It may not be for you, but at some point you should try to play with one of these apps, so you understand it. I like variety in my diet, so this enables me to create meals that fit the macros. It also helps me work out what on the menu in restaurants fits in with my dietary goals. It is some work, but not necessarily a huge amount.
My future plans of eating low-ish carbs Mediterranean style 5 or 6 days a week and keto/fasting 1 or 2 days mean I will obsessively log my food for those days, and yeah - have a sandwich, a pizza, a burger, a pasta on the other 5 days. I will let the scale tell me if I am doing OK.

I will take a look after I have done 2 weeks of Keto. Like you I fast 16:8 so I won’t be having a breakfast. So lunchtime I will eat for example tuna - avocado- egg and a small amount of the appropriate nuts. Then I will eat a Keto dinner 🥘 if I don’t lose much then I will have a re think 😁
I think you are fine. The weight is pouring off me in a way that I am starting to not share it because I am getting tutted.
