I completed week 8 today. I've been noticing that when I run I become short of breath; even know I would be able run faster if this would not happen. Any advice how can I balance this out? Thanks.

Don’t think too hard about breathing. It will become easier as you get fitter. Every now and then inhale through your nose and exhale through your mouth. Deep breaths. But in general don’t think about it too much. It gets easier the more you run.

For any runner a sustainable pace is dictated by their ability to breathe.
If you are not having deep full breaths then you cannot oxygenate your blood, which means your muscles are not receiving enough oxygen and you will tire quickly. This is the difference between distance running and sprinting.
It is recommended to run C25K at an easy conversational pace........so that you can speak aloud clear ungasping sentences as you run. This pace builds stamina and is the pace that most elite athletes spend up to 80% of their running time.
You build speed once you have developed a strong runner's body..........not during the programme. It is the sign of an inexperienced runner to run flat out all the time.
Use C25K to build your base and then in coming months you can spend 20% of your time working on speed.
