Viral incubation: why do bugs hide before they strike?

Ever wondered why the incubation period varies between different diseases and why those unlucky enough to be developing an infection can be contagious with some diseases (and perhaps be totally unaware of this) and yet not be so with other diseases? While this article by Grant Hill-Cawthorne, Lecturer in Communicable Disease Epidemiology at University of Sydney, is specifically about Ebola, it is the first time I've come across an article that explains all this - and it's easily readable too.
