should I take vitamin supplements if I only eat one meal per day and what vitamins would you think I should take? I do snack her in there but feel tired most of the time really sleepy

You must ask about getting an appointment with a dietician - I well understand how exhaustion and having cirrhosis/HE affect your appetite and abilty to eat but a single meal a day is not healthy for you at this stage. You should be able to get supplement drinks on prescription - they are a complete food alternative when you have difficulty eating.
