hello Gardener JH. That sounds delicious, what do you add to make it into ice cream?
I used one very large Florida avocado because a neighbor had too many on her tree. The recipe calls for 3 avocados.
I added 3/4 of a cup of original nut pods creamer(almond and coconut milk), 1/2 cup of Allulose, 1 ripe banana, 1/4 cup of maple syrup 1 put in 1 tsp of mint extract but the recipe calls for 1 tsp of vanilla. I put this in a blender then my ice cream freezer. I then put the ice cream into silicone muffin cups in the freezer to have individual portions. Take them out and wrap in plastic wrap. I eat mine with some mini chocolate chips and coconut whipped cream. It makes a great dessert. It makes 6 servings.

There are lots of recipes for avocado ice cream I don’t want the sugar so I use Allulose and a little maple syrup.
FYI Vitamin K2 is the vitamin which helps bones. It is very scarce in the modern Western diet although can be found in foods from grassfed animals. Humans are generally not very efficicient at converting K1 (the usual form) into K2, hence the suggestion that we take a supplement. It is found in some fermented foods, notably the Japanese fermented soy called natto.
Prunes are generally touted as being a good source of boron, another important bone nutrient. And yes, avocadoes contain Vitamin K, but it is K1, also found in many other foods, like leafy green vegetables. However avocadoes are a good source of boron.
I eat my prunes daily and take a K2-MK7 supplement. Avocados are good for bone heath and osteoporosis . It is my understanding that your body makes K2 from the K1 we eat.
