I am having these heart palpitations (tachycardia) from the last 4 months (specially after eating). Done 4 ECGS all blood work everything came back fine except low B12 and folate levels.
I bought a FITBIT watch just to track my heart rate during sleep and daytime. It was all okay from the last 2 weeks but yesterday morning when I woke up I saw there was a sudden spike from 60s BPM to 90-120BPM for 2 hours and then came back to 60s BPM. The sudden spike of heart rate didn't woke me up, just found out in the morning.
Could this be a glitch of the watch OR there is something serious going on.

It could be many things including the positioning of the fitbit on your wrist while you move around during sleep.
However, low B12 and folate are serious conditions that must be addressed. You can get supplements for each but you should also address them through your diet. Folate is found in green vegetables, especially arugula, kale, broccoli, rapini, and spinach among others. One of these green foods should be eaten daily. B12 is found in animal protein, dairy and eggs. However you don't need to eat a lot of these things. A 3 oz piece of animal protein is all the body needs in a day for good nutrition. Fermented dairy such as aged cheese (gouda and jarlesberg are best) and plain Greek yogurt is healthier than milk.
In general, most people do best on a whole-foods, plant-based diet.
Daily exercise is also important, ideally at least 20 minutes with an elevated heart rate above 120 bpm.
If you want to investigate further, get these blood tests (you may have to do them privately):
