Surely this is not your heart but your brain activity being monitored.? (whether you are asleeep or not)
What is recording this?
The red line is supposed to be my heart activity as measured by my Apple Watch and recorded on Auto sleep app.
Could be thats the time when you move into REM sleep stage. Thats when the heart rate gets elevated. Unfortunately your watch does not display REM but its when it moves out of light sleep and then up to REM.

If you look between 4 and 5am it is going up while I am going down into deep sleep xx

That first spike certainly looks like REM to me. The second? No idea. Usually nightmares occur during REM or light sleep. I wonder if you went into a nightmare after your 'awake' period, and the heart continued for a while before settling down?
Between 4 and 5 is when most H.A. and strokes occur.. oxygen levels drop. The majority of us sleep through but the saying bang in the night is roundabout this time more than likely.. I would put it down to a restless sleep forget about it and carry on... There are all sorts of reasons why our hearts bounce about in the night.
