I'm no expert SE, but to my way of thinking, all cooking alters the nutritional value in some way, but the more water you use, then the more opportunity there is for water soluble vitamins to leach out.
I would assume, that boiling, poaching and steaming, would all do more damage than a quick zap in the microwave, but I suggest this is something that you research online and form your own opinions
Hi Slimming Eagle. No! Microwave cooking isn't good, in plastic containers. I saw a nutritionalist recently. She told me, take food out of plastic containers and put into a pyrex/ovenwear dish and cook in the oven. I think the plastic can somehow (?) transfer into the food, which isn't good for our bodies. Ok on some days, I personally would buy a steamer, lots of stuff steams very quickly and veg tastes better too, I bought a 3 tier one from Argos very cheaply, and is great, slow cooker are great too, lots you can do with them, not just soup and casseroles.
