Hello everyone, hope you have a wonderful week so far and looking forward to the weekend around the corner! π€
Today I made simple soup using gluten-free vegan Tom Yum paste to make the rice noodle soup with slices of fresh mushrooms, tomatoes and tofu in mushroom broth.
This is one of our traditional comfort soup dishes especially on these chilly day. ππ
As always, be inspired, be joyful, take a picture and Enjoy it! πβ€οΈ
That looks so healthy and refreshing π That would tick all the boxes for me and I love your sweet little tray as well. Definately ready for the weekend, hope you have a lovely weekend
All your food creations have the everyone's seal of approval π All of it is amazing - you show how much choice a vegan really can have π
Oh I didn't realise that tray was oven safe as well - what a bonus
A cup of mint Tea and almond choc sounds lovely to me - I am thinking of having waffles/fruit and choc and cream dessert tomorrow ( I know, I am such an animal but I have been soooooo good) I will post up as well
Awe Deb, I think itβs good we can share each other good ideas even we have restrictions such as gluten and Low fodmap, we can still enjoy Vegan meals to the max. π€πWaffles and fruits are sooo refreshing and weekend choc and cream treat sounds great to me as you should be able to enjoy since youβve been doing so good all week already. ππ
The tray is part of the casserole set too Deb so I can bake food and dessert at the same time in oven. π
I will look our for your food creation post tomorrow. Have a great weekend Debs! ππ
This looks so delicious π It looks so warming and good. I love the tray too, itβs a lovely colour. And even better knowing you can bake cookies in it π
Awe thank you HungryHufflepuff for saying that! π€π
I have soup for my meals almost every dinner too and I love it esp in cold weather. ππ
Thank you H. , love blue color and so convenient the tray that it is also the top of the casserole baking tray so I can bake at the same time dinner and dessert too. π
This is my (very early) lunch today, not worthy of its own post, but still a very nice soup, and warming too. I also added some angel hair pasta (not gluten free, sorry) and I had some leftover broccoli that I used more like croutons, inspired by Jerry who uses vegetables instead of croutons πNot a great picture, and I should probably have cleared the table before taking the photo βΊοΈ
Awe looks so wholesome and delicious. ππAt first glance I thought you made curry soup. Sometime we make curry less thick like a soup texture and just like how you prepare with Angel hair spaghetti or rice noodle. Love when we are inspired to replace junks with veggies instead. ππ
Thank you for sharing your lunch, I think I might make some curry soups soon if I can get some bamboo shoots. π€π
I made a very thick soup, with lots of vegetables and lentils then blended together. It does look a curry colour. I havenβt made curry soup but that sounds good. π
Very healthy and hearty comforting soup ππ which is perfect right now so cold and you probably laugh when itβs California coldness comparing to UK. π
Hi Byron2020, I think if I live in UK, I will have hearty soup and stew for all my meals during Winter time. I bet you just had some delicious soup or stew for dinner over there too. ππ
