Wednesday Lunch/Dinner: Baked Kale and Zucchini with Cashew sour cream. πŸŒ±πŸ§…πŸ₯¬πŸ˜‹β€οΈπŸŒΊ

Hello everyone, hope you have a wonderful midweek! πŸ€—

Today I baked kale and zucchini with homemade cashew sour cream. πŸ˜‹

Recipe:

1. In food processor, purΓ©e 1 onion and plenty of kales to make a medium thick paste.

2. I have a small bag of frozen already shredded zucchini so I defrosted and squeezed out excess water and dried them with a cloth.

3. Mix everything in a bowl with egg replacer (4 tbsp of Bob Miller egg replacer powder with 10 tbsp of water, added 1 tsp of turmeric can give yellow color of egg),4 tbsp almond flour and herbs seasoning.

4. Baked in the oven at 180C for 30 mins.

5. Cashew sour cream: in a mixer, blend half cup of soaked cashews, 1 tbsp apple cider vinegar, 1/4 cup of cashew milk, 1 tbsp nutritional yeast and 1/2 tsp of salt.

It is delicious with fresh avocado slices and cashew sour cream. πŸ˜‹πŸ‘

Dessert: mixed berries fruit cake which I made yesterday and will enjoy later with a cup of tea. 😁

I had salmon and eggs for today's lunch at the salmon was on its use by date today on some crumpets which I enjoyed when I came home after my interview this morning.

I went away from the interview feeling in my heart I had given it the best I could which is all that matters but the world won't end if I don't get the job!

Very healthy and appetizing lunch you had. Baking is a tasty and nutritious way to cook your vegetables. I know for some veggies, some of the nutrients become less available after baking but on the other hand it increases the availability of othersπŸ˜πŸ‘. So it all depends on your dietary needs.... I would love to try your homemade sour cream too. Have a peaceful nightπŸ€—πŸ™.

The original plan was making fritters but then I wanted to try see if baking is good as I want to minimize oil and any type of frying. It turned out good also. I have some leftover so will have for lunch later on. πŸ˜‹πŸ‘

Oh I see, I am sure they would have made lovely fritters as well, definately makes sense to keep the oil to a minimum. It really does look wonderful
